The following recipe was Pansy Pearl James' and was a family
favorite (you may copy this recipe as long as credit is given to
Pansy Pearl James):
Jumbo Raisin Cookies
2 cups raisins
1 cup water
1 cup crisco
2 cups sugar
3 eggs
1 Tablespoon vanilla
4 cups flour
1 teaspoon Baking Powder
1.5 teaspoon salt
1 teaspoon baking soda
1.5 teaspoon cinnamon
.25 teaspoon nutmeg
.25 teaspoon allspice
1 cup chopped walnuts
boil raisons for 5 minutes in the water. Cool and set aside.
Cream sugar and shortening. Add vanilla and eggs and juice from
raisins. Stir in dry ingredients and blend well. With a spoon add
raisons and nuts. Drop by teaspoon onto greased cookie plan. Bake
at 350 degrees for 12 to 15 minutes.
Makes about 7 dozen cookies.
